Active Polyphenols mg/kg as per label
HMF
Hydroxymethylfurfural less than 40 mg/kg, to check if honey has not been heat treated and the freshness (age) of the honey
Tutin
Less than 0.70mg/kg, to check for neurotoxins
C4s
C4 sugars less than 7%, to check for adulteration
Diastase
Diastase activity not less than 7 shade/g, to test the enzyme activity in honey
Moisture
Moisture content less than 20%
Foreign matter
Should be not present, quality marker
DNA
DNA pollen from the floral type of honey less than Cq 36 
APC
Aerobic plate count less than 10.000 cfu/g for hygiene and food safety
Escherichia coli
Less than 10 cfu/g for hygiene and food safety

Less than 1000 cfu/g to avoid fermentation of your honey
